Tofu turkey pita burgers
This is a great healthy alternative to the regular beef burgers. It’s super simple to make and super tasty! This recipe can be easily modified using veggie patties if you’re a vegetarian. It’s equally delicious! I use whole wheat pita bread for my burgers, but you can use any type of pita bread you like. Also, this recipe will be just as delicious with lamb or beef patties. This recipe makes 4 servings.
1 lb ground turkey
6 oz silken soft tofu (half a package of tofu)
1/2 red onion, finely diced
2 garlic cloves, minced
1 teaspoon salt
1/4 teaspoon ground black pepper
extra virgin olive oil
lettuce or any mixed greens you like
1/2 English cucumber, sliced
4 whole wheat pita bread
1 1/2 tablespoon ground curry powder
2 cups plain nonfat yogurt
2 teaspoons fresh lemon juice
Preheat broiler or grill.
Combine ground turkey with tofu, onions, garlic, salt and pepper. Mix until all ingredients are incorporated. Form into 4 patties.
Brush the patties with extra virgin olive oil. Cook the patties until done, about 5-6 minutes on each side. Alternatively, the patties can also be pan fried in a non-stick pan over medium heat for 5-6 minutes on each side.
Combine the yogurt with curry powder, a pinch of salt & pepper, and lemon juice. Mix well and set aside.
Trim the tops of the pita breads, trim off about 1/4 inch.
Open up the pita breads and place a piece lettuce or mixed greens in each. Followed a turkey patty, a few slices of cucumbers, a big spoonful of the curry yogurt mixture, and finish topping off with some alfalfa sprouts. Placing the lettuce at the bottom and alfalfa sprouts at the top will help the prevent the pita bread from becoming soggy.
Serve with extra curry yogurt on the side. Enjoy!
